""There are few hours more agreeable than the hour dedicated to the ceremony known as afternoon tea"" - Henry James. Join a trained chef and cake baker for an introduction to cooking the simply delicious delights of an English Afternoon Tea, washed down with the perfect cup of tea.

Popularised in the mid-nineteenth century, the concept of afternoon tea was born from a feeling most people would be dishonest to deny having experienced - a mid-afternoon hunger pang. Although avant-garde in her late dinner time of 8 o'clock, Anna, the Seventh Duchess of Bedford was perhaps more fashionable for her snacking routine, comprised of an afternoon order of tea, cake, and sandwiches being delivered to her rooms for the first time in 1840. A habit we now seem to chastise, this practice became quickly established throughout society, garnering the respect of upper-class and society women whose dress for the occasion well-reflected the quality of sweet and savory treats on offer.

A tradition now largely lost or celebrated almost solely under the guise of nostalgia, Afternoon Tea facilitated many cultural phenomena from which we continue to benefit: a meeting space for women during progressive points in history; a valuable, and incomparably ""agreeable"", moment to pause in an otherwise hectic daily routine; and, of course, the utterly incomparable joy that comes with lashings of cake, cream, and jam.

Led by Ballymaloe-trained chef and cake business founder, Clementine Haxby, this interactive cookery class will demonstrate how to recreate one of our most sacred culinary traditions as we make sweet scones together, all washed down with the perfect cup of tea. Participants will also be given guidance on how to make the perfect Victoria sponge cake, homemade jam, and a traditional Irish tea brack loaf cake inspired by Clementine's training at Ballymaloe Cookery School. Designed to explore one of our most valued food traditions this class aims to encourage exploration of food memory and nostalgia, as well as provide the basic foundations for hosting an afternoon tea fit for the Duchess of Bedford.

We're not giving away our secret scone recipe* just yet, but here are the items that you will need for the cooking class:

  • Plain white flour
  • Butter
  • Small free-range eggs
  • Caster sugar
  • Baking powder
  • Whole milk 
  • Demerara sugar 
  • Cream for whipping
  • Jam

*Participants will be provided with a formal recipe, including measurements, prior to the class.

In the summer of 2019, Clementine Haxby left a career in Digital Marketing in order to pursue her interest for food and hospitality, completing the Ballymaloe 12 Week Diploma in December 2019. Having studied Art History at the University of Oxford, Clementine combined her passion for design, tradition and baking to found a bespoke cake business, Clementine's Cakes, during the 2020 lockdown. Further to this, she works as a freelance chef, food entrepreneur, recipe developer, nutritionist, and personal trainer. Her personal passion lies in the exploration of the connection between food and memory, celebrating the nostalgia of taste, and the beauty of simple, delicious and seasonal eating.
