In this interactive cooking class, we'll focus our talents on chicken and mushroom pie, followed by a blackberry and apple fool. Join Ballymaloe-trained chef, Clementine, in the kitchen to prepare a wholesome, delicious, and seasonal dinner to tuck into on a cold autumnal evening.

Olivier de Serres (1539-1619) certainly knew what he was talking about when he extolled the virtues of seasonal eating - and the use of common sense (whether he meant in the kitchen or elsewhere!). However, in a world where fresh produce from across the globe is available anywhere, at any time of year, our generation has somewhat lost sight of the beauty of seasonality. Trained on Ballymaloe Cookery School's organic farm in County Cork, Ireland, Clementine gained her professional training over the Autumn of 2019, fuelled with ingredients picked daily and defined by the annual growing calendar. The farm's apples stuck in her memory as her first taste of what it really means to enjoy food at its best, and most nutritious.

In this hands-on class, we will learn how to cook a heartwarming, wholesome, and savory pie from scratch - providing participants with the skills to do this again solo and to benefit from a recipe that can also be made using leftovers for a quick and easy dinner. We’ll be talked through different savory pie techniques, leaving us armed to create pies suited perfectly to the tastes of you and your loved ones. 

No Autumn meal is complete without some dessert to leave us feeling warm inside. We’ll be finishing off our evening with a blackberry and apple fool, another adaptable and classic recipe that can be dressed up or dressed down to suit your company. We invite participants to prepare their own fool, a sweet cream and fruit purée dessert, alongside Clementine, to accompany the homemade chicken and mushroom pie - the perfect Autumn menu. 

Led by Ballymaloe-trained chef, caterer, and cake business founder, Clementine Haxby, this interactive cookery class will demonstrate how to recreate some warming delights - celebrating simply delicious food at its best, to be enjoyed from the comfort of home. 

We're not giving away our secret recipe* just yet, but here are the items that you will need for the cooking class:

  • Cooked chicken meat
  • Butter
  • Onion
  • Mushrooms
  • Double cream
  • Fresh parsley
  • Lemon juice
  • Salt/pepper
  • Roux sauce
  • Puff pastry
  • Cooking apples
  • Caster sugar
  • Blackberries (fresh or frozen)
  • Double cream

*Participants will be provided with a formal recipe, including measurements, prior to the class.

In the summer of 2019, Clementine Haxby left a career in Digital Marketing in order to pursue her interest for food and hospitality, completing the Ballymaloe 12 Week Diploma in December 2019. Having studied Art History at the University of Oxford, Clementine combined her passion for design, tradition and baking to found a bespoke cake business, Clementine's Cakes, during the 2020 lockdown. Further to this, she works as a freelance chef, food entrepreneur, recipe developer, nutritionist, and personal trainer. Her personal passion lies in the exploration of the connection between food and memory, celebrating the nostalgia of taste, and the beauty of simple, delicious and seasonal eating.
