A cornerstone of Sicilian street food, Panelle is a dish that has been served in Palermo markets for over 1000 years!

Palermo street food has become famous the world over for its variety and its authenticity, with dishes that have been served in the busy street-markets relatively unchanged for centuries. One of the simple offerings that newcomers fall in love with are Panelle, small chickpea fritters, a recipe brought to Palermo when the Arabic kingdom ruled Sicily. Vegan, gluten-free, and very satisfying, Panelle are a delicious starter or snack for everyone.

Panelle are lightly crispy on the outside and irresistibly creamy in the middle. They are deceptively simple and can be tricky to get right. In this class, you will learn how to make perfect Panelle using various techniques, and we will show you the pitfalls to avoid. We will also go over the proper knife technique for chopping fresh herbs.

You are invited to cook along with this interactive class or just watch and discuss.

We're not giving away the secret recipe* just yet, but here are some things that you will need for the cooking class:

  • Chickpea flour (dram flour)
  • Water
  • Parsley
  • Fennel seeds
  • A pot
  • A frying pan
  • Oil for deep frying

*Participants will be provided with a full ingredient list prior to the class.

Led by chef, culinary instructor, and expert on Traditional Sicilian cuisine, Michael Sampson, this interactive lesson will show you how to make the perfect Panelle. Designed to inform curiosity and future travels, participants will come away with an increased understanding of Sicilian cuisine, Palermo street food history, and all the tricks and tips necessary to make this dish at home.

Michael Sampson trained as a chef at ALMA school of Italian cuisine in the north of Italy and has been living and working in Sicily for the last 12 years. Michael has worked at the Gambero Rosso cookery school in Palermo, was head chef and teacher at the Anna Tasca Lanza cookery school in central Sicily, and for the last 3 years has been running The Sicilian Pantry cookery school in Palermo’s historical centre where he teaches daily cooking lessons covering many traditional Sicilian dishes with guests from all over the world.
