Learn how to make Orecchiette pasta, the iconic dish of Puglia, with a local expert. From her kitchen in Lecce, Ylenia Sambati will share the art of forming perfect Orecchiette, using techniques passed down from her grandmother.

Orecchiette pasta is a Puglian classic. No trip to the heel of the Italian peninsula would be complete without sampling a plate of this hearty peasant fare. A staple in every local household and on trattoria menus, this small cup-shaped pasta is often served with a simple tomato sauce or dressed with sauteed broccoli rabe, rich in extra virgin olive oil and garlic. Their name comes from their shape, which resembles a small ear, or orecchio, in Italian.

Making Orecchiette means connecting to old traditions and a slower lifestyle. Rolled by hand, one at a time, cooking becomes a meditation, and pasta production a rhythmic flow. No pasta machine is required in this relaxing hands-on class. Using only Durum Wheat or Semolina flour, water, and salt, the ingredients are as simple as the finished product is delicious.

This interactive cooking class will have you making Orecchiette like an expert and will bring the flavor of Puglia to your kitchen.

Ylenia Sambati is the founder of Cook in Puglia, an Italian cooking school based in Lecce, Puglia that specializes in local and seasonal eating and showcases native Puglian teachers. Her cookbook will be published in early 2021.
