Join us for a hands-on cooking class to learn how to make three tasty and simple tapas recipes from a real Madrilena. We will also learn how to make an authentic sangria to drink with our small plates!

Ranging from a light snack accompanied by a caña (a small glass of beer) to an informal meal, the tradition of going out for tapas is firmly rooted in Spanish culture. The essence of tapas is social, not nutritional. The key to enjoying tapas is to relax, unwind, and enjoy delicious food, drink, and conversation with friends.

Together we will prepare three small plates and some delicious sangria to accompany our tapas:

Salmorejo - a cold soup made of raw ingredients typical of southern Spain. Similar to gazpacho, it is creamier and richer (and more delicious!)

Spanish Tortilla - a national favorite! We will learn how something so simple has become an art form.

Crispy Artichokes with Salt and Lemon - a delicious vegetarian accompaniment to our tapas menu.

Sangria - we will learn to prepare a refreshingly light drink that you won’t regret the next day...

Led by a gastronomy expert, Helena Vaello, this interactive lesson will have you making tapas like an expert. Designed to deliver a taste of Spain to your kitchen, participants will come away with an understanding of the cultural tradition of tapas and how to recreate some key dishes at home.

We're not giving away the secret recipes* just yet, but here are some things that you will need for the cooking class:

List of ingredients:

Salmorejo

  • 1 pound of ripe tomatoes at room temperature
  • 1 baguette (or any bread with crust)
  • 2 garlic cloves
  • 2 tablespoons of a good extra virgin olive oil
  • Salt
  • 1 boiled egg
  • A good blender or food processor 

Spanish Tortilla

  • 1 1/4 pounds of potatoes (Monalisa, Kennebeck, or any that feels rather soft)
  • 1/2 an onion (optional)
  • 6 eggs
  • 2 cups of frying oil (olive for a more flavourful tortilla, or sunflower or any mild flavorless one will do)
  • A medium-sized (20 - 22cm) nonstick pan and a lid
  • 1 spatula
  • 1 strainer
  • 1 bowl that fits both the potatoes and the eggs

Crispy Artichokes with Salt and Lemon

  • 3 - 4 artichokes
  • ¾ cup of a good extra virgin olive oil
  • Kitchen paper
  • 1 lemon
  • Salt
  • A medium-sized knife to peel and cut the artichokes, a medium-sized non-stick pan, and a lid

Sangria

  • 1 ¾ cups of frozen red berries (strawberries, raspberries, or any red berries you like)
  • ⅓ cup of sugar
  • 1 orange
  • 4-5 branches of fresh rosemary
  • 2 cinnamon sticks
  • 1 bottle (750ml) of a young, floral red wine. Spanish carbonic maceration (Tempranillo, Garchacha), a Beaujolais (gamay), or a young Zinfandel would be perfect, too.

*Participants will be provided with a full ingredient list prior to the class.

Helena Vaello's passion for food has determined her career. After finishing her Audiovisual Communication studies at the age of 23, she changed course and started a successful catering business that was in operation for 5 years. Then, whilst pursuing a postgraduate course on gastronomic journalism, she began working as a freelance restaurant consultant and cooking instructor. Helena has written about food for several media outlets, including the national food and tourism guide, Guía Repsol, covering a wide range of national events related to haute cuisine, food trips, conventions, and different presentation and specialized courses. Over the past several years, she has worked in the communications and PR team in one of the top producers of ibérico meats, Arturo Sánchez. At present, she leads that department in Remírez de Ganuza, an iconic winery located in Rioja Alavesa.
